Caribbean Eggs Benedict?

May 14, 2011

Sure, why not?

Opting for a different, healthier version of eggs benedict (and drawing inspiration from my experience at Goat Town), I decided to experiment. For this Caribbean eggs benedict (for lack of a better name), I used whole wheat toast; wild tuna steak; a homemade salsa consisting of vine-ripened tomatoes, onion, garlic and jalapeno; and a dash of smoked paprika to top it off. And a tomato-peel rose in the background for you.

Emily, loved your site and was inspired by all the variety and imagination. You are a woman of many talents !! Soon you’ll need a larger kitchen to keep up with the demands – this is just the beginning.

If you could deliver this Sunday morning around 8:30-9, that would be terrific. Thanks!

    P.S. Bring orange juice.
